Pizza for Pudding

Not just any pizza... watermelon pizza! Fresh, fruity and drizzled with dark chocolate. What's not to love?


The kids thought I was bonkers when I told them we were having pizza for pudding. But they had so much fun making these watermelon pizzas (I didn't have quite so much fun clearing up their mess afterwards).


A 150g portion of watermelon contains around 20% of your daily vitamin C recommended intake, as well as 18% of your recommended vitamin A. Both of these are vital for healthy skin. Vitamin A helps to repair and create new skin cells (check out my blog post on this vitamin here) whilst vitamin C is needed for collagen production. (Collagen is an important protein found in skin and is responsible for keeping your skin strong, smooth, and hydrated. In other words it helps to keep those wrinkles away!)

Watermelon is great on a hot sunny day as it's got a water content of over 90% so it helps keep you hydrated

But on to the important part... the recipe! These are so quick and easy to make and you can use any fruit you have lying around for the toppings.


Recipe


Servings: 2

Prep time: 10 minutes

Total time: 10 minutes


Ingredients


  • 1/4 watermelon

  • Variety of fruit (such as berries, grapes, kiwi, banana, mango)

  • Dark chocolate


Method


  1. Cut the watermelon into pizza shaped slices

  2. Melt dark chocolate in a saucepan

  3. Decorate the watermelon pizza base with fruit of choice

  4. Drizzle over the melted chocolate
