Pectin acts as a prebiotic—essentially food for the beneficial bacteria living in your gut. Research shows that pectin stimulates the growth and activity of helpful bacteria whilst inhibiting harmful species such as Clostridium and Bacteroides.
These changes matter because when beneficial bacteria feed on pectin, they produce short-chain fatty acids (SCFAs)—particularly acetate, propionate, and butyrate. Making stewed apples is wonderfully simple. Here's a basic recipe that maximises the gut-health benefits by also including chia seeds.
Ingredients
4 organic apples (any variety), washed and chopped with skin on
4-6 tablespoons water
1-2 teaspoons ground cinnamon
6 tbsp chia seeds
Optional: 1/2 teaspoon ground ginger, 5 whole cloves, 1 teaspoon vanilla extract, 2 tablespoons raisins
Method
Don't peel your apples! The skin contains the highest concentration of pectin, quercetin, and other beneficial compounds. Simply wash them well, core them, and chop into small, evenly-sized pieces.
Add the chopped apples and water to a saucepan.Â
Add cinnamon and any other spices. Bring to a gentle simmer.
Cover the pan and reduce heat to low. Cook for 10-20 minutes, stirring occasionally, until the apples are very soft and beginning to break down.Â
If the pan becomes dry during cooking, add a splash more water to prevent burning.
Remove from the heat. If using vanilla extract, stir it in now.
The finished stewed apples should have a russet-brown colour and a soft, broken-down texture
Add the chia seeds and leave to cool before storing in an airtight container in the fridge for up to 5 days. You can also freeze this so it’s a great one for batch cooking!
